A veal tongue is much smaller than a beef tongue, which makes it an ideal 2-person dish.

The veal tongue also has a more subtle taste and cooks faster. (Let it simmer for about 90 minutes in tasty stock, then peel)

The veal tongues are ready to be cooked. Upon arrival at Gustor, they go 1 night in lightly salted water to remove all blood residue. Then they are frozen fresh.
