Ocean Beef Striploin – How to Cook It Perfectly

🥩 Thin Steak (1 to 1.5 cm / ½ inch)

Pan or Grill

  1. Remove the steak from the refrigerator at least 1 hour before cooking.
  2. Pat it dry with paper towels.
  3. Heat a cast-iron pan or grill to maximum temperature.
  4. Cook for 45 seconds to 1 minute per side.
  5. Let it rest for 2 minutes.
  6. Season with coarse sea salt after cooking.

BBQ

  1. Prepare a very hot direct cooking zone.
  2. Grill for 45 seconds to 1 minute per side.
  3. Let the steak rest for 2 minutes.
  4. Finish with coarse sea salt.

Tip: For thin steaks, speed is everything. Cook as hot and fast as possible.


🥩 Classic Steak (1.5 to 2.5 cm / ½ to 1 inch)

Pan

  1. Remove the steak from the refrigerator 1 hour before cooking.
  2. Heat a cast-iron pan until extremely hot.
  3. Cook for 1.5 to 2 minutes per side.
  4. Optionally add a knob of butter during the final minute.
  5. Let the steak rest for 5 minutes.
  6. Season with coarse sea salt.

Grill or BBQ

  1. Use maximum direct heat.
  2. Grill for 1.5 to 2 minutes per side.
  3. If necessary, move briefly to a cooler zone.
  4. Let the steak rest for 5 minutes.

Internal Temperatures

  • Rare: 48°C / 118°F
  • Medium Rare: 52°C / 125°F
  • Medium: 56°C / 133°F

Our recommendation: Medium Rare (52°C / 125°F).


🥩 Thick Steak (2.5 to 4 cm / 1 to 1.5 inches)

Pan + Oven

  1. Sear the steak for 2 minutes per side in a very hot pan.
  2. Transfer to a 120°C (250°F) oven for 5 to 10 minutes.
  3. Use a meat thermometer whenever possible.
  4. Rest for at least 8 minutes.

BBQ or Grill

  1. Sear for 2 minutes per side over direct heat.
  2. Move to indirect heat.
  3. Continue cooking until the desired internal temperature is reached.
  4. Rest for at least 8 minutes.

Internal Temperatures

  • Rare: 48°C / 118°F
  • Medium Rare: 52°C / 125°F
  • Medium: 56°C / 133°F

🥩 Extra Thick Striploin (More than 4 cm / 1.5 inches)

Reverse Sear BBQ Method

  1. Stabilize your BBQ between 110 and 120°C (230–250°F).
  2. Place the striploin over indirect heat.
  3. Slowly cook until it reaches 48°C (118°F) internally.
  4. Remove the meat from the BBQ.
  5. Increase the heat to maximum.
  6. Sear for 1 minute per side.
  7. Rest for 10 minutes.

Serving Temperature

  • Medium Rare: 52–54°C (125–129°F)
  • Medium: 56°C (133°F)

The thicker the steak, the more important it becomes to heat it slowly and finish it with a short, powerful sear.
