RECIPE – ST. LOUIS STYLE RIBS ON THE BBQ

Exclusive recipe by Belgian BBQ Champion Dimitri Zetsche for Gustor customers

This recipe was developed specifically for Gustor customers by multiple Belgian BBQ Champion Dimitri Zetsche.

Unlike many BBQ recipes, this method is not based on strict timings or a 3-2-1 formula. Instead, you learn to read the ribs by observing color, bark formation and tenderness — exactly how competition pitmasters work.

Ingredients

  • 1 rack St. Louis Style Ribs
  • Gustor MeatPal Pork Rub
  • Gustor BBQ Red Sauce (optional)
  • Apple juice
  • Butcher paper or aluminum foil
  • Smoker, kamado or BBQ set up for indirect cooking
  • Optional smoking wood

Step 1 – Thaw and prepare

Fully thaw the ribs in the refrigerator.

Remove the membrane from the back of the rack.

Pat dry thoroughly.

Step 2 – Apply the rub

Season generously on both sides.

Allow the rub to work into the meat for at least 30 minutes.

Step 3 – Prepare the BBQ

Set up the BBQ for indirect cooking between 110 and 120°C.

Place the ribs meat-side up.

Close the lid.

Step 4 – Build the bark

Leave the ribs untouched for the first hour.

Once the rub has dried, begin spraying lightly with apple juice every 30 to 40 minutes.

The purpose is to create a cool and moist surface that attracts smoke particles and helps build a richer bark.

Step 5 – When to wrap

Do not wrap based on time.

Wrap only when:

✅ The ribs have developed a deep mahogany bark.

✅ The surface starts sweating moisture.

✅ The bark looks fully set.

Add a small splash of apple juice.

Wrap tightly and return to the BBQ.

Step 6 – Check for doneness

Lift the rack from the center.

If it bends nicely and small cracks appear on the surface, it is nearly ready.

Next, insert a toothpick into the meat.

If it slides through with almost no resistance, the ribs are perfectly cooked.

Step 7 – Glaze

Brush with Gustor BBQ Red Sauce if desired.

Allow another 10–15 minutes for caramelization.

Resting

Rest for at least 15 minutes before serving.
