- 1 Txogitxu Dry Aged Côte à l’Os of approximately 1 kg (2.2 lbs)
- Coarse sea salt

Preparation
Remove the meat from the refrigerator at least 2 hours before cooking.
Pat the surface dry with paper towels.
Season generously with coarse sea salt just before placing it on the barbecue.
Step 1: Slow Cooking
Preheat your BBQ or kamado to a stable temperature between 110 and 120°C (230–250°F).
Place the Côte à l’Os over indirect heat.
