Game is renowned for its distinctive flavour and unique character. But not everything we know as game has actually lived in the wild. Pheasant, duck, deer and even wild boar can come from animals that have been farmed, raised or supplementary-fed under controlled conditions. That certainly does not mean the meat is inferior. Quite the opposite: farmed game can be exceptionally tender and remarkably consistent in quality. But truly wild game is different. Less predictable, sometimes a little firmer, but with a character that is difficult to reproduce. And those differences also affect the way the meat should be prepared.
