Beef Short Ribs Low & Slow Without a BBQ or Smoker: The Perfect Oven Method
Absolutely. You don't need a barbecue or a smoker to make incredibly tender Beef Short Ribs.
In fact, for many home cooks, an oven is the easiest and most reliable way to achieve perfect low & slow Beef Short Ribs.
While a smoker certainly adds its characteristic smoky flavour, the real secret behind melt-in-your-mouth short ribs isn't the smoke. It's time, low temperature and patience. And that's exactly where an oven excels by maintaining a perfectly consistent cooking temperature.

Recipe: Beef Short Ribs in the Oven (Without a BBQ or Smoker)
Step 1 – Preparation
Unlike pork ribs, you don't need to remove the membrane from the bone side of Beef Short Ribs. The meat sits mainly on top of the bones, so you won't bite into the membrane.
- Pat the ribs dry with paper towels.
- Trim away only excess fat and any loose silver skin.
- Generously season both sides with your favourite BBQ rub.
- Let the rub rest for at least 30 minutes.
Pro tip: Spread a thin layer of mustard on both sides first. It acts as a binder and helps the seasoning stick better.
Step 2 – Low & Slow Cooking
Preheat your oven to 120°C (250°F) using conventional or fan-assisted heat.
Place the Beef Short Ribs on a wire rack above a roasting tray so hot air can circulate evenly around the meat.
Cook slowly for approximately 3 to 4 hours, depending on the thickness of the ribs.
Step 3 – Wrapping
Once the ribs have developed a beautiful deep red colour, it's time to wrap them.
Place them on heavy-duty aluminium foil and add:
- a little brown sugar;
- a generous spoonful of honey;
- extra BBQ rub;
- a splash of BBQ sauce;
- a few small pieces of butter.
Seal the foil tightly to trap the steam.
Increase the oven temperature to 140°C (285°F).
Step 4 – When Are Beef Short Ribs Done?
After approximately 1 hour, check for doneness.
Insert a toothpick between the bones.
If it slides through with almost no resistance, like butter, your Beef Short Ribs are perfectly cooked.
If there's still resistance, continue cooking for another 40 minutes, then check again.
This is exactly the same technique used by many BBQ champions.
Step 5 – Finishing
Carefully open the foil.
Brush the ribs with a thin layer of BBQ sauce.
Return them to the oven, uncovered, for 10 to 15 minutes at 120°C (250°F) to caramelise the sauce.
Pro Tip: Prepare Beef Short Ribs in Advance
Many people avoid serving Beef Short Ribs when entertaining because it's difficult to predict exactly when they'll be ready.
Here's how we do it.
- Cook the ribs one or even two days ahead.
- Complete every step up to the end of Step 4.
- Store them in the refrigerator.
- While enjoying an aperitif, gently reheat the wrapped ribs in a 50°C (120°F) oven.
- Just before serving, complete Step 5.
This gives you perfect timing, zero stress and outstanding results every single time.
How to Add Smoky Flavour Without a Smoker
Although an oven won't produce smoke, you can get surprisingly close.
Mix a little smoked paprika into your BBQ sauce during the last 10 minutes of cooking or use a BBQ rub that contains smoked spices.
The difference is remarkable.
The Result
You won't get exactly the same smoky flavour as a pellet smoker, but you will end up with exceptionally tender, juicy Beef Short Ribs that almost fall off the bone.
For many home cooks, this is actually the easiest way to master low & slow Beef Short Ribs.
