The origin of this cow dates back many centuries to when it was used as a beast of burden. Only many years later it`s culinary qualities were discovered and now the main purpose of the Charolais cow is the production of meat.
The Charolais is an exceptionally pure breed, it hasn`t been crossbred that is why the cows have a very strong immune system and farmers don`t need to use medication or vetirinaries. The animals don`t need an abundance of grass and even in areas where food is scarce they still produce more meat than average.
On the wide plains of the Auvergne, these cows mainly feed on grasses herbs and luzerne, all of this results in higly flavoured and tender meat.
