Pork belly, slow-cooking

Ingredients (±1 kg piece)

  • 1 piece of pork belly (with skin)
  • Salt (generous amount)
  • Pepper
  • Optional: garlic, thyme, rosemary

Preparation

  1. Preparation
    • Score the skin in a crosshatch pattern (do not cut into the meat)
    • Rub generously with salt
  2. Slow cooking
    • Oven: 120–140°C
    • Place on a rack (fat side up)
    • Cook for 2.5 to 3 hours until very tender
  3. Crispy finish
    • Increase oven to 220–240°C or grill/broil mode
    • Roast for another 15–25 minutes until the skin is crispy
  4. Resting
    • Let rest for 10 minutes before slicing

Result

  • Inside: very tender
  • Outside: crispy crackling
